If you love the cooling taste of the Greek condiment tzatziki, you’ll relish this full-fledged, full-flavored cucumber salad utilizing the same delicious ingredients. Dill is another prized digestive carminative that pairs wonderfully with cucumber.

GLUTEN-FREE, GRAIN-FREE, NUT-FREE, QUICK, VEGETARIAN

MAKES 2 CUPS | PREP TIME: 15 MINUTES

1 cup Greek yogurt

2 garlic cloves, minced

3 or 4 tablespoons chopped fresh dill

½ teaspoon sea salt

1 tablespoon freshly squeezed lemon juice

1 tablespoon grated lemon zest

1 English cucumber, peeled

1.In a small bowl, mix together the Greek yogurt, garlic, dill, salt, lemon juice, and zest.

2.Slice the cucumber thinly and place the slices in a serving bowl.

3.Pour the prepared tzatziki sauce over the cucumbers. Toss well to combine.

4.Cover and chill until ready to serve. Serve cold.

INGREDIENT TIP: English cucumbers are long, dark green cucumbers with very small seeds (or no seeds). You may substitute regular garden cucumbers in this dish. Just be sure to scrape out the big seeds (they can impart a bitter taste to your salad) by cutting the cucumbers in half lengthwise and running a spoon down the center.
